Ebullimetre / Ebullioscope
Instrument used in the lab to determine the alcoholic strength of
a wine. It works on the ebullimetric principle. The most common instruments
used are two types: Malligand and Salleron.
Enography
Description of various types of wines.
Enologist
He who deals with enology.
Enology
A science dealing with the preperation, preservation and evolution of
wines.
Enotecnician
The person responsible for viticulture and wine producing who
studies and practices enology after qualifying at a specialized school
in this field.
Enotecnique
Tecnique applied in order to scientifically produce wine.
Enzyme
Any of a group of complex proteins that acts as a catalyst in specific
biochemical reactions.
Esters
Compounds produced by the reaction between an acid and an alcohol. They
evolve during the ripening and refining of wine and can be either volatile
or fixed.
